Guinness-Cheddar Cheese Spread

This delicious cheese spread was a big hit when we brought it to a St. Patrick’s Day party earlier this month. The sharp cheddar balanced by the mellow stout is a perfect mach with hearty rye toast. With flavors reminiscent of rarebit sauce on toast, this is a perfect appetizer for a casual dinner party!

Spotted Dog ~ Irish Soda Bread

You should know by now, dear readers, that I am of Irish blood and that I love to celebrate St. Patrick’s Day! While a hearty loaf of brown Irish Soda Bread usually graces our table on this festive day, this year, I decided to branch out and make a spotted dog. After comparing many sources, I decided to base my version on a recipe whose source was right in the heart of Ireland.

Chili Dog Pot Pies

So it’s a rainy day in Georgia, dear readers. It’s one of those chilly, damp, almost-spring-but-not-quite days when you just want to curl up at the end of the day with a meal that will warm you from head to toe. So driving home this afternoon, I started to think about chili. Then I started to think about chili dogs. Then my mind wandered to a nice pot pie. And then I thought, why not go with ….. all of the above???
