I think you can tell from the photograph where this delicious treat gets its name!
This creamy and delicious salad was a favorite in my family when I was growing up. My mom first found it in The Congressional Club Cook Book (8th Edition, 1970) and it has been a tradition in our house ever since. We usually have this around Christmas time, ,but I think that it makes a gloriously green addition to any St. Patrick’s Day or Easter table, too!

So it’s that time of year again. Despite the snow that is falling here in North Georgia today, spring is just around the corner. Soon we’ll be doffing our sweaters and opting for tank tops and flip flops. So maybe it’s time to watch what we’re eating so that we can be fit and trim for the warm months!
Here is a healthy meal that doesn’t feel, taste, or look healthy at all. It’s colorful and meaty and full of flavor. The spicy heat of the fish contrasts perfectly with the cool, creamy avocado salad. And the leftovers make great fixings for a taco night!

This is a wonderful and (gasp!) healthy dip that features black-eyed peas and other delicious beans in a light dressing tossed with some fresh herbs. I tasted something similar to this concoction at a party and decided to try to re-create it for myself! The husband really liked this one . . .

During the summer here in Georgia, there are days that are so swelteringly hot that you are loathe to turn on any heat-generating appliance in the house. Today was one of those days.

Hello, dear readers! Sorry for the brief hiatus – the hubs and I were enjoying a long weekend at the lake with our friends. Good times and good eats were had by all. But now it’s back to bloggin’!
One of my favorite things about our CSA farm is the crazy varieties of heirloom and specialty veggies that we get from them – these Chinese Red Noodle Beans come in every summer – they are over a foot long and naturally coil up like snakes. It’s fun to cook with these because you can show your guests you’re feeding what they look like before (ew!) and what they look like afterwards (yum!).
